Barry Callebaut formally launches ruby, the fourth type, in the United States and Canada.

WE ALL KNOW milk, dark and white: now there is ruby.

Ruby is made from pure cocoa beans and through unique processing, international chocolate producer Barry Callebaut unlocks the flavour and colour naturally present in select beans. No colours or berry flavours are added. It’s not officially designated as chocolate yet – Health Canada has to give the formal nod – but you can taste this new confection now on a dipped ice cream cone at Chocolats Favoris in Quebec, Ontario and B.C., and in the Ruby Kit Kat by Nestle.
